How Long to Cook a Turkey

Remember when Roasting Poultry, Turkey and Chicken must be roasted thoroughly to prevent the risk of food poisoning. Goose & Duck can also be fully cooked or roasted until lightly pink so that the meat remains moist and tender. If you choose to stuff the Turkey, remember to recalculate the overall weight and adjust the cooking time accordingly. The neck cavity is the preferred area for stuffing a Turkey.

Top Tip’s

  • Remove the wishbone. Make for easier carving.
  • If possible roast the bird on a wire/rack trivet .
  • Season and fill the cavity with aromatic vegetables and herbs (carrots, celery, onion, garlic, rosemary & thyme) to enhance flavour of the meat and sauce.
  • Roast the bird breast side down. Most of the fat deposits are on the back of the bird which will render through the breast allowing the turkey cook in its own juices. We do not recommend using tin foil as this will result in a steamed skin.
  • Is it Cooked? There are two ways of checking, Ovens and Turkeys will vary so take a thin skewer and insert it into the thickest part of the leg, between the Breast and the base of the Thigh, remove and press it flat against the flesh to ensure the juices run clear or twist the turkey drumstick, if it gives and there is not too much resistance that indicates the turkey is cooked.
  • Before carving, allow your roast to rest for a tender more succulent texture.
